Tonight I had the pleasure of coming home to dinner already made. My wonderful husband made us pizza! BUT, this was no ordinary pizza. A friend of the family passed on this recipe to us, due to both of our fairly strict diets. I enjoyed it so much that I want to continue the trend and share it with all of you! Basically this recipe is for the crust, and then you can top it to your heart’s desire.
Fooled Ya Pizza
16 ounce bag of frozen cauliflower (lightly steamed)
¾ cup of egg whites
2 cups of low fat shredded mozzarella cheese
Lightly steam cauliflower and squeeze as much liquid out as possible.
Put in a food processor and pulse 2 or 3 times (you want it to be chunky)
Add the egg whites and pulse 2 or 3 more times
Dump this mixture into a bowl and add the cheese along with garlic, onion powder, and Italian seasoning—mix well
Place parchment paper on a jelly roll pan and spray very well with a non-stick spray (I use Coconut oil spray from Trader Joes)
Pour the mixture onto the sprayed parchment paper and press down
Bake at 450 for 20 minutes and let cool a little while before putting toppings on the top
You can add any toppings you like—I like pesto, chicken and cheese, but have also used a red sauce and bacon and pepperoni.
After adding the toppings, broil (not bake) the pizza until done (it does not take very long).
And Vuala! Guilt free pizza! I have to say it didn’t taste much different than regular pizza to me. However I am used to eating things that are not quite what they seem…
